I can’t wait to share with you Rebecca Lang’s latest cookbook, QUICK FIX SOUTHERN!  Rebecca is a very busy mom herself, and this cookbook is geared toward delicious, quick meals.  As Rebecca says, “…homemade hospitality in 30 minutes or less.”  What mom doesn’t want that??  It is at the top of my list for gift-giving this Mother’s Day!Rebecca is a contributing editor to SOUTHERN LIVING magazine and often writes a column called, “Girls Night Out”, so she knows what moms like!  Her newest cookbook will guide you through great recipes for everything from breakfast to tailgate parties~ with drinks, appetizers, salads, sweets, and more in between.

My family and I have had a great time sampling the recipes and deciding what we would like to serve for Mother’s Day lunch.  Although the list is long, here is one of our favorites!  It is called Strawberry Kiss, and these are all the ingredients you need…Rebecca’s recipe calls for champagne, but I made it kid-friendly and used sparkling grape juice.  The recipe is simple (did I mention the whole cookbook is geared toward quick and easy?!).

STRAWBERRY KISS

1 pound fresh or frozen strawberries, thawed

1 bottle sparkling wine or champagne

1 lime, sliced, for garnish (I substituted with blackberries)

Remove stems from strawberries and place the berries in a food processor fitted with a metal blade.  Process until pureed.

Pour sparkling wine into champagne glasses, leaving about 1 inch at the top of each glass.

Add 2 tablespoons of pureed strawberries to each glass.  Garnish.

My children love this and it feels so fancy~ we will definitely serve it for Mother’s Day!  Rebecca’s cookbook has so many delicious recipes, I started thinking how nice it would be to pair the cookbook with a fabulous serving piece for Mother’s Day.

I also think Rebecca’s cookbook would be a great gift for TEACHERS!  There is a yummy recipe for Spiced Pecans that would be perfect to give along with the cookbook~ something for the teacher to enjoy right away and something to keep and use forever!

And the pecans also pair nicely with the small serving bowls from R Wood- I’m a big fan of these cute bowls!

I also think these bowls would be perfect for Rebecca’s Texas Caviar, Lima Bean and Bacon Hummus, her Chilled Strawberry Peach Soup, her Spring Veggies with Herbed Dip…the list goes on and on and on.  I can’t wait to try them all~ and I know the moms, teachers, and girlfriends in my life will be happy to have their own copy of QUICK FIX SOUTHERN.  It may not be a surprise anymore, but I know they will love it!
